Ingredients: 1 pound Lentils; 1 can Black beans – rinsed; 1 can Rotel -mild, hot (OR fire roasted diced tomatoes if you don’t want it spicy); 1 Onion (chopped); 3-4 Long carrot sticks - (sliced); 2 stalks celery and leaves (chopped); 1 tsp minced garlic (or powder if you don’t have diced garlic); 1 tsp Salt; 1/8 tsp pepper; 1 Cup smoked ham (OR shredded chicken or turkey; or browned ground beef or turkey)
